Roasted Vegetables Recipe

I have had so many requests to share this recipe of one of my favorite dishes! I call it "Roasted Vegetables" haha.
It's super easy! I preheat my oven to 400-420 degrees Fahrenheit. While the oven is heating, I chop my root vegetables to the size I desire that day.
I usually use:
Carrots
Beets
Brocolli
Cauliflower
Romanesca
Fresh Turmeric root
& any other roots I have.
I no longer eat potatoes, not even sweet potatoes, but if you do, you can add those as well.
I then add all of these together with a heavy handful of pumpkin seeds to my roasting dish. I add my seasonings such as garlic powder, coriander seed, cayenne pepper, ginger powder, sage leaf, and any other seasoning I have on hand and am in the mood for. I mix these seasonings into the vegetables and then add 2-3 tablespoons of coconut oil and 1 tablespoon of raw butter.
Once the oven is ready, I put the lid on the roaster and put this prepared mixture into the oven. I set the timer for 3-5 minutes, so that I can open it and stir the mixture after the oil and butter has melted. Then I set the timer for 15-20 minutes more.
While that is in the oven, I begin washing and chopping my leafy greens which usually include:
Beet Greens
Curly Kale
Dino Kale
Broccoli leaves
Collard Greens
Parsley
Mugwort
Spanish Needle
& anything else I have on hand!
After the roots have cooked for 20 minutes, I open the oven and remove the lid.
I add my chopped greens to the mixture and stir thoroughly, before closing the oven and allowing them to cook (without the lid) for 15 more minutes.
Once they are done cooking, I remove them from the oven and allow them to cool for a few minutes. I then serve myself a healthy portion into one of my favorite bowls. I squeeze half of a fresh lemon into the bowl and add some Summa Salts and a dash of hot sauce and enjoy what I have prepared for my nourishment!
The photo in this blog also has sauteed chicken! If you wish to add chicken to yours as I do mine, cook your chicken while the vegetables are cooking. I use the same seasonings for my chicken and cook it with raw butter or coconut oil. When the chicken is done cooking (I usually use the thighs) I will cut it into bite size pieces and add it to my bowl of vegetables.
